KIND OF FOOD:

Coconut and Peanuts are frequently paired in Indonesian cooking.

You can add them to rice dishes, dressings, snacks like the recipe here, and desserts.

Gado Gado is a traditional Indonesian salad that has a dreamy peanut and coconut milk dressing. “Gado Gado” means “mix-mix”- a very versatile dish that can be made with any mix of vegetables. The dressing:  Use 1/3 smooth peanut butter, 3 tsp soy sauce, 2 tsp brown sugar, the juice of 1/2 lime, a couple of crushed garlic cloves and chili paste to taste, 1/2 cup of coconut milk.

 

INGREDIENTS

1/2 cup Oats
1/2 cup Shredded Coconut
1/2 cup Peanut Butter
2 tbsp Flax Seeds
6 tbsp Maple Syrup
3 Medjool Dates

RECIPE PREPARATION

Peanuts and coconut are a thing of perfection . .

Mix all ingredients, except half the coconut shreds. If the mix is too dry add 1 more tbsp maple syrup,  if it’s too wet add more oats.

Make small balls with the mix and roll them on the remaining coconut shreds.

Refrigerate them for 30 minutes before eating them.
