Simple supper ideas for peas

Peas should be the star ingredient. Sweet and mellow jewels.

 

Peas are spring’s favourite bouncy balls. There are many dishes to create during the season using peas as the star ingredient.

Here are a few ideas:

  • Shrimp, radishes and peas in a parsley-infused olive oil
  • Simple peas with shallots, olive oil  and mint
  • Pea soup with crispy bacon on top – Blend together Chicken stock, peas, onions and garlic. Season with salt and pepper.
  • Pasta with peas and parmesan
  • Pasta with peas and a coriander spinach sauce made with lemon juice, cashews, garlic powder and salt.
  • Crab or white fish cakes with peas and tomatoes.
  • Peas with jamón serrano and thinly sliced onions

Clams in green sauce

An absolutely fabulous seafood dish that comes together in minutes.

Start by poaching the chopped onion and garlic, once sweat, add the tbsp of flour and let it cook.

Add the glass of white wine and let the alcohol evaporate.

Add the cup of water or fish broth. If using water, add salt.

Once the liquid simmers for a few minutes, add it to a blender with the fresh parsley.

Put the sauce back in the pan and add the raw, closed clams in. Cover them with a lid and let them open.

Enjoy with more chopped fresh parsley

 

Sushi

How to Make Sushi Rolls and Perfect Sushi Rice .

 

First, start with SHORT GRAIN SUSHI RICE, but if we pay attention to the shape of the grain, we can also choose other varieties, perhaps risotto rice such as “Roma”.

Wash the rice with COLD WATER to remove any residual starch. Keep going until the water is clear.

Soak rice for 15 minutes.

Follow the rice to water ratio, which is always 1:2.

Traditional sushi has Sharizu (or vinegar seasoning) which is made with 9 parts Rice vinegar, 4 parts cane sugar, and 1 part sea salt. Cook it for 2-3 minutes in medium heat. And is added when the rice is cooked.  First mix the rice so it cools down, then add the seasoning (1 oz per every cup of rice).

Cover the rice with a damp towel. It will keep it moist and ready.

A GREAT TIP: discard the bottom layer of rice, as it is almost always dry.

HOW TO MAKE SUSHI ROLLS:

First, the nori has two sides: Smooth and Rough. The rough side will always go facing up.

Then, the rolls have three parts:

  1. Nori on the outside
  2. Rice  on the inside
  3. Fillings in the center

There are traditional rolls made with fresh fish and world-adapted options prepared with ingredients from each country to make fusions that are very interesting. How do you prepare your sushi?

  • Mexican: The use of chipotle, spicy mayonnaise, cream cheese, different chilis, jícama…
  • Italian: Prosciutto, basil, tomato, mozzarella…
  • Thai: ginger, mango, coriander, peanuts
  • Moroccan: couscous, aubergine, tahini, hummus, harissa…
  • Bahamian: Decadent Conch Sauce atop a crab stack + cream cheese roll
  • Brazilian: Salmon, cream cheese and passionfruit

Creamy Salmon with Spinach

Behind every mouthful, there is a mysterious and soothing bite.

Pre-heat your oven to 200ºC.

In an oven dish place the salmon fillets, previously seasoned with salt and pepper, and the spinach leaves.

In a hot pan, sautee the onion and garlic until softened. Add the cream and the mustard. Season with salt and pepper and let simmer. Once it has simmered for a few minutes, add the sauce to the salmon and spinach, coating everything very carefully.

Put in the oven for 20 minutes, or until the salmon is perfectly cooked.

Seared Tuna with Orange Juice and Rosemary

A quick and tasty fish dish ideal for any day.

 

Make the marinade with orange juice, chopped onion, chopped garlic, chopped rosemary, maple syrup, and salt.

Add the tuna to the marinade and leave it there for at least 20 minutes.

Once the fish is marinated heat a grill or a pan with a drizzle of avocado oil.  Sear the tuna on all sides for a few minutes (adding the marinade on top so it cooks alongside.)

Once the tuna is cooked add some sesame seeds to the outside and slice.

Shrimp Tostadas

A classic Mexican dish. A fresh, vibrant and fabulous dish.

We use pre-cooked shrimp. Marinate them in a simple sauce made with lime juice, chopped cilantro and a pinch of salt. Blend it all together and throw in the shrimp, the red onions and the radishes.

Grab a tostada, spread some mayo. Add the shrimp, avocado, red onion on top and radishes on top.

You can add some drops of Valentina sauce or Salsa Verde on top.

Shrimp with black garlic and ginger

Do a marinade for the shrimps with lime juice, salt, avocado oil,  black garlic and minced ginger. Let marinade for at least 1 hour. Cook the shrimp in the oven 200ºC for 20 mins, or on the stove in a pan.

Accompany it with a bowl of rice with cucumber and nectarines. Add cherry tomatoes, celery, and omega 3 seed mix. ( Sunflower seeds, pumpkin seeds, sesame seeds, flax seeds.)

This bowl can be eaten as a lunch on its own, by adding hummus to the mix.

Mustard Salmon

Pre-heat oven to 180ºC

Put the salmon in an oven dish, add a bit of salt.

With a spoon add a thin layer of mustard on the salmon fillets, then add a drizzle of honey and a drizzle of soy sauce.

You can add broccoli, asparagus or other veggie you like.

Put in the oven for 15/20 mins.

You can enjoy it with sweet potato puree.
